Yummy Tilapia with Lemon Pepper Parmesan Sauce! RECIPE

Last night we had this for dinner, I have never had Tilapia before and the price is always good on FRESH Tilapia at Walmart so I thought, what the heck.

I searched the internet and found a recipe, then ADAPTED it to a Healthier Recipe (which I will talk about later) and gave it a try.

Hubby gave it two thumbs up, said he liked it.  Now, the translation of that, when it comes to my husband, is this; "You can make this again." LOL!  If he says, "aaaah, its okay", that's a polite way of saying, "I will eat it this time but, don't make it again plz" lol!!

So if you like Tilapia OR you like fish in general, I would say this recipe could be used on Sole, Halibut or Salmon even.

You will notice there are TWO recipes, one is for a Serving for 2 and the other for a serving for 4 People.


FRESH TILAPIA WITH LEMON PEPPER PARMESAN SAUCE

 (For 2 People/Servings)
8oz Fresh Tilapia
1 Tbsp Coconut Oil
2 Tbsp Freshly Grated Parmesan Cheese
1/2 tsp Sweet Basil
1/4 tsp Onion Powder
1/2 tsp Black Pepper
3/4 Tbsp Hellman's Mayonnaise made with Olive Oil
2 Tbsp Fresh Squeezed Lemon Juice

Move your top rack up to about 4 or 5 inches from the element in the oven and turn your Broiler on so it is good and hot when you are ready.

Mix all the ingredients together EXCEPT the Coconut Oil into a small bowl or measuring cup.

In a small bowl, on a warming setting, melt the Coconut Oil in the microwave, if you use a pot on the stove, make sure NOT to overheat it.  Add it to the mixture and stir well when melted.

Wash the fish fillets and place on a pan that you can broil with.  Make sure it is NON stick!

Broil for exactly 2 minutes, then take out and flip.

Broil again for exactly 2 minutes and take the pan out of the oven... with a teaspoon, spoon out the mixture and cover the fish fillets.

Broil again for 2 minutes OR until you see little brown dots forming.


CALORIES per 4 oz serving of  Tilapia with the sauce: 266 Calories

*DO NOT use low fat or another mayonnaise... the recipe will NOT turn out as good and the fats in this recipe are all GOOD FATS, not bad ones.

This was served with on a bed of Wild Rice with shredded uncooked Carrots and Mushrooms
This is also NOT a portion sized Serving, this was my Husband's meal which was 6oz of Tilapia

RECIPE FOR 4 SERVINGS

Use the same cooking method as above but, use these amounts for the dish.

1lb. of Fresh Tilapia (4oz per serving)
2 Tbsp of Coconut Oil
1/4 Cup of Freshly Grated Parmesan Cheese
1 tsp Sweet Basil
1/2 tsp Onion Powder
1/2 tsp Black Pepper
1 Tbsp Hellman's Olive Oil Mayonnaise
1oz of Fresh Squeezed Lemon Juice (1 Lemon)
