And it was WELL received by my otherwise finicky family!
QUINOA ASIAGO PASTA DISH
INGREDIENTS:
- 4 pkgs Tofu Pasta (House Foods Tofu Shirataki)
- 3 Tbsp Eggplant Hummus (Summer Fresh)
- 2 Tbsp Asiago Artichoke Dip (Summer Fresh)
- 3/4 Cup Cooked Quinoa
- 220g Italian Turkey Sausage
- 3/4 tsp Black Pepper
- 1/2 tsp Garlic
INSTRUCTIONS:
Cook the Quinoa according to the package in one pot. Keep the lid on it till you are ready to assemble.
While the Quinoa is cooking, remove the Turkey Sausage from the Casing and cook in 2-3 Tbsp of water with 1/2 tsp of Garlic drain off the liquid and set it aside with the lid on.
Rinse the Tofu Pasta VERY well and place in a large bowl, then microwave for about 2 & 1/2 Minutes or until HOT! Drain off any excess water.
Add the Quinoa and mix very well.
Now add the remaining ingredients and mix well.
Recipe makes 4 equal Servings. Calories: 292 per serving.
**VARIATIONS: You can add red peppers finely chopped or green peppers but, keep it simple so the veggies don't overpower the flavor that is there. You could also add Pine Nuts for added crunch... remember whatever you add, adds calories as well, make them count! Experiment and find your taste!** ♥
