I have a bit of a CRAZY week ahead of me, repairs on the house, fireplace cleaned & professionally swept, doctor check up, orthodontist (no not me! lol!) etc... etc... etc... so, this week, I will post what I can, as I can in the blog.
I know from the responses, the RECIPES are always a great idea for me on the run lol!
So here is one that you can play with, it has the basics, keeps the calories down and the nutrition UP, and you can add to it as you see fit.
Seeds, Nuts, other flavors or seasonings... I DO encourage you to experiment with the recipes and see what you can create that excites your taste buds, satisfies your cravings and keeps you away from DIEts!!!! lol!!!
HINT: YOU COULD, add some Organic DARK chocolate chunks to this one from the health food store hehehe! just a thought :o)
Ingredients:
1 cup Whites Only
1 cup unsweetened applesauce
1/4 cup organic cane sugar
2 Tbsp of Organic Agave Nectar (Blue)
2 cups canned unsweetened pumpkin (OR fresh is Best!)
2 cups unbleached all‑purpose flour (Bob’s Red Mill)
1 tbsp non-aluminum baking powder
1 tsp baking soda
½ tsp Sea salt
2 tsp ground cinnamon
½ tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
Instructions:
Preheat oven to 375 degrees F.
Lightly rub a 12x18x1‑inch pan with coconut oil.
In a large bowl, whisk together egg whites, applesauce, sugar and pumpkin.
Sift together the flour, baking powder, baking soda, salt, and spices.
Gently fold dry ingredients into pumpkin mixture; do not over‑work. Spread mixture evenly in prepared pan.
Bake until firm to the touch and lightly browned, 20 to 25 minutes.
Cool, then slice into 24 bars.
Serving Size: 1 bar
Nutritional Analysis: Calories 102 Fat: 0.1 g. Cholesterol: 0 mg. Carbohydrate: 23.0 g Protein: 2.4 g. Sodium: 68.0 mg
SPICED PUMPKIN BARS
Ingredients:

These are CARB Bars, so they are great for the mornings! AND, you CAN add Pumpkin Seeds or Almonds to it, just remember, whatever you add, INCREASES the Calorie Content, across the board! AND... as I mentioned, you COULD pick up some RICH (85% or more) Organic Chocolate chips and just add a few to help with any cravings or just to put your own spin on this one ENJOY!! ♥
