Tuesday's Weigh In & a Recipe! (Stuffed Green Peppers)

Sorry I am a bit behind on the times here, going to post a couple of my recipes tonight to try to make up for it.


On Tuesday I weighed in HOPING to see a decent number, in spite of the fact that my hip was still bothering me, lack of workout time due to renovations... I did.


I am another 2lbs down, and nearing the 40 pounds gone mark.  I like to strive for the "round" numbers if you will lol!!


So that put me at a total weight loss thus far, as of Tuesday that is, of 36 pounds gone and not coming back! 


I am struggling to be honest, with fitting time for workouts, mainly due to the end of the school year, and she had the stomach flu, which left me exhausted the next day because of broken sleep... I am out looking for taps, sink, flooring etc... and booking people to come in and give us estimates on doing some of the work for us.  Like the countertop and the flooring at this point.


BUT, I keep reminding myself, this is temporary, the interruptions and I am keeping my eating on track  :o)

STUFFED GREEN PEPPERS 

1 lb. Firm Tofu
½ cup shredded cheese (any kind)
garlic, salt and pepper to taste
1/4 cup each chopped cilantro & parsley
1 small yellow pepper, chopped
2 scallions, chopped
4 large green peppers, cleaned, with tops removed
1 ½ cups medium to hot salsa (Or to taste)
1 ½ cups tomato sauce (or to taste)

Mash tofu together with cheese. Mix in garlic, salt and pepper to taste. Add chopped cilantro and parsley. Mix in yellow pepper and scallions.

Stuff mixture into the 4 large green peppers that have had tops removed and been cleaned. Place in pan large enough for all four, open side up. Cover with a combination of medium hot salsa and tomato sauce. I use about 1 ½ cups of each.

Bake at 350 degrees for about 45 minutes. The baking time can vary depending on size of peppers. It shouldn't take more than an hour. Hope you like this.
