Banana Muffins! Recipe!


Sorry I haven't been on the Blog the past 24hr, my "mini me" was down with the stomach flu and we are deep into renovations at the moment.

So here is a very simple and tasty Recipe for some Muffins to make up for it lol!

Feel free to personalize the recipe by adding what YOU like, nuts, chocolate chips but, try for healthy adds or your muffins that were good for you, become junk.


BANANA MUFFINS
1 & ½–2 cups Bob’s Red Mill Unbleached Pastry Flour
½ tsp salt
½ Cup Bob’s Red Mill Amaranth Flour
2 tsp baking powder
2 large, very ripe bananas
1/3 cup applesauce
1/4 cup Agave Nectar
1/3 cup Almond Milk (No sugar Added)
1 Tbsp Grapeseed Oil
1 Egg

In a large bowl, combine the flour, salt, and baking powder.

In a blender, puree the bananas; add the applesauce, honey, egg, oil and almond milk.

Mix well.

Pour the banana mixture into the dry ingredients and stir until just moistened.

Fill the small paper muffin cups with the batter and bake at 350 degrees for 30 minutes or until lightly brown and firm.

Nutrition Facts: Per serving (One Muffin): 105 Calories (10 Calories from Fat)

You can add Pecans (3 Tbsp) & Chocolate Chips (3 Tbsp) for a change in this recipe, but remember each muffin will then be around 200 Calories.
