RECIPE ---> Not Mine but, Sharing :o)

On our way home today from the Canada Day Parade, we stopped to pick up an item, I noticed a little book on the counter, they are always free, so I brought it home to check out the new recipes.
Hey, why invent the wheel if you don't have to lol!!!  so I found this recipe and with a few "tweaks" its a healthier alternative than the original.

Maple Ham & Asparagus Strata

Serves 8 People
10-12 Stalks of Asparagus
1 Whole Grains (Ace) Baguette (not white approx 325g)
1 cup Diced Ham (No Nitrates/Nitrites)
2 cups Shredded Light Cheese (Havarti, Cheddar or a blend)
1/4 Cup finely chopped green onions
3 Eggs
3 Additional Egg Whites
2 & 1/2 Cups Almond Milk (Unsweetened)
1 Tbsp Dijon Mustard
1/4 tsp Sea Salt & Pepper
1 tsp Mrs Dash Original

  • Wash & trim the Asparagus, (make sure you get about 2 cups out of it) place in a shallow NON-stick pan.
  • Cut the Baguette or tear it into cubes and spread them evenly in the pan with the Asparagus.
  • Add the Chopped Ham, shredded cheese and sprinkle with the green onions.
  • In a separate bowl, beat the eggs and the egg whites together and add the Almond Milk, mustard, salt and pepper and then add it all to the pan mixture.  Careful NOT to move the previous ingredients around.
  • Press it down and smooth it out where necessary.
  • Cover and refrigerate for at least 4 hours, best is 12 hours.
  • Bake at 350 Degrees F for 1hour or until golden, let stand for 10 minutes before cutting and serving.

Average calories: 235-240 per Person.

If you serve with a side salad, throw in some oranges and some walnuts to really treat the taste buds!  Maybe a Honey Dijon Dressing as well. ♥

*Happy Canada Day*!!
