I know they LIKE crackers... so I went for a flat bread and they are pretty good with veggies, only one of them hates mushrooms.
So I put some of "this" on a flat bread and stuck it in their face and said "try this"... "what is it?"... "just try it, you will like it"... you could tell by the faces they were ready to hate it before tasting LOL!! Love it!!
Everyone in the house loves it!!
HOME MADE ROASTED RED PEPPER HUMMUS
INGREDIENTS:
- 1 Cup Chickpeas
- 1 Cup of Jar Roasted Red Peppers well drained
- 2 & 1/2 Tbsp Tahini
- 2 Tbsp Omega Flaxseed Oil or Extra Virgin Olive Oil
- 2 Tbsp Sesame Oil (Cold Pressed)
- 1 Tbsp Lemon Juice (Fresh Squeezed)
- 1 Tbsp Tomato Paste
- 1 tsp Paprika
- 1/4 Cup Balsamic Vinegar
- 1 & 1/2 tsp of "Italian Herbs" seasoning
- Pinch of Sea Salt
If you decide to use canned Chickpeas instead of dried, read the label and if you see "EDTA" or High Sodium content, don't buy this... this should be a Healthy Alternative to the ones you can buy in the grocery store and the amount you can make, will be a lot more than those little containers that cost you $$$$.
The Oils you purchase should be in a DARK bottle, the reason for this is sunlight or florescent lights actually begin to turn your oil rancid (spoil it) before you ever open it. So the two things you want other than the Dark Glass is... Virgin and First Press. Cold Press is NOT true, it takes HEAT to get the oil out of whatever they are extracting it from, "cold press" means they used a little less heat... so don't be fooled by the labeling.
*YOU CANNOT COOK WITH FLAXSEED OIL IT WILL KILL YOU* Seriously!
Flaxseed Oil is intended to be used just as it is, you can mix it into recipes but, never heat it, it changes the molecular structure and creates a fat that is extremely unhealthy for our bodies and over time it will kill you. Flaxseed oil needs to be refrigerated after opening.
This is such a simple recipe to make... put everything into a food processor OR blender and puree until smooth and well mixed.
This Humus has to be eaten within 4 days or it will turn on you.

Serving Suggestions (Don't forget to add the calories - On average 100 per serving):
Fresh Veggies, Ryvita Breads, Whole Grain Crackers, "St. Urbain Authentic Flat Bread Original" (available at most grocery stores and Walmart super centers) or Flat Tortillas
VARIATION: You can substitute 3 Cloves of Garlic for the Roasted Red Peppers to make Garlic Humus.
